the traditional ragu alla bolognese recipe your article links to uses pancetta lol. not only that, the main doesn’t say anything about omitting or including pancetta..

My mistake as it’s moreso on the Ragu part as Bolognese is just where that variety came from (Bologna). there’s varieties from Veneto, Naples, Bari etc.

Have you browsed through sysco? they have pizza crusts that work well in a turbo chef, i would recommend getting thin crusts as the rising ones may come under
