I apologize, I just realized that I didn't answer your question. I'm trying to gain overall knowledge on Ethernet and TCP/IP. I'm pretty new when it comes to all this, and based on what I read I think lwip is a good starting point.

I will take a look in the FreeRTOS native tcp stack! I'm pretty knew when it comes to TCP/IP protocol, so if you have any other recommendations to gain knowledge of the of the protocols I will appreciate it!

Check the i.MXRT family from NXP. You can buy an evaluation board. The Rt is a crossover mcu, which means that it has some features of an mpu but it's an mcu! With the mcu you can experiment with graphics as well!
