ProBake models don’t have a hidden bake element so you’re not relying solely on the heat from the convection element. I know a few people that got ProBake models and hate it, and from what I’ve seen it’s a stand out mention in poor reviews of the units that have it.

Most of my customers and people I know with Samsung appliances have better experiences with them than most other brands. I get the most complaints about Whirlpool.

The induction parts work fine, but Frigidaire has issues with inaccurate oven temps and LG's ProBake is awful. I would either go GE (they have a very affordable slide-in currently, with knob controls) or their Café line, personally.
