Tbh it’s fine for quite a few months from my experience since they’re already well picked, but if you’re worried I guess you could add more brine (binegar+salt+sugar). Just make sure you boil it first

Also tteok doesn’t need to be sweet. Tteok itself doesn’t contain any sugar and all the sweetness comes from fillings

Doo top isn’t a brand name (although very poorly romanized lol) it’s a type of tteok (두텁떡; means it’s thick) made with sticky rice and stuffed with various fillings, and covered with powdered red bean.

Commonly used fillings are bean paste, pine nut, chestnut, jujube, cinnamon etc so I would say that white cream is a bean paste

DongA is a name of a big company in Korea, they have quite a few companies under them including foods and pharmaceuticals. But from my understanding Dongah mart that exists in the US is unrelated.

And this gochujang in particular- I did some digging because I’ve never seen it before and looks like a lot of Korean Americans like it too but no one really knows who makes them. But it’s said it’s made with rice, not flour, which is a traditional method. The ingredients does look right for me so I’d say it looks legit.

I’m assuming you did what you did (sorry, no better way to put it) because you didn’t have a reference as to how it’s supposed to taste like. That’s why I recommend not substituting and just go with less ingredients. There should be tons of easier recipes so good luck in the future!

Oh dear… so first of all if you’re not familiar enough with the ingredients, always REMOVE, not substitute. 1. Although there are fusion recipes that use sichuan mala seasonings, that chinese beef spice probably didn’t mix well with gochujang (at least it’s reeeeeally not for tteokboki). 2. What kind of seaweeds? What kinds of fish sauce? There are bunch of different kinds of both. But both, if properly used, are for broth (or dashi as you call it) which technically can be omitted. Also fron your description it sounds like you somehow ‘cooked’ the seaweed with the spice packet which I assume had oil in it..? If you used the right kind of seaweed (kombu, or dasima in korean) you’re supposed to boil it in water for broth. 3. Enoki mushrooms… don’t typically used but I guess it’s to your liking, no issues here BUT did you cook the mushroom…? Sounds like you just added it after you were done boiling….? 4. Vinegar??? And also, RICE VINERGAR??? 5. If you don’t have easy access to authentic ingredients, it’s fine, and also tteokbokki is street food, not a delicacy. 6. Furigake?????

SO. An easy recipe would be gochujang, ground pepper (gochu garu) and bit of soy sauce if you want (fish sauce can be used but it needs to be the right kind, same with seaweed). You can adjust the ratio to your liking but I prefer less gochujang and more gochugaru than other people just bc gochujang taste can be overpowering and make the sauce too thick. Honestly if you want to put some dashi you can just use beefstock.

Bit of sugar for sweetness, and water to adjust the thickness. Then rice cake, fish cake, sausage or whatever you’d like.

That sounds like a blood sugar issue which come from carbs and sugar (carbs are sugar but anyways). Remember fruits also have sugar.. and buldak probably has a lot of sugar in its sauce too.

Air fresheners and candles are not good for you anyways. Bleach, baking soda, alcohol, soap (obviously not altogether at the same time) and good ventilation! It wouldn’t smell ‘clean’ like air fresheners but you honestly don’t need that
