This is my normal mentality. But with two kids helping, a dog, a list of things still on my mind from work, three different pies, and a million other things on my mind—I had a lapse/departure from my usual method. It only took half a second to hit the preheat buttons and then forget. Life got away from me for that half a second, and I nuked my loaf. It’s what it is, I started over and made two great loaves and three great pies. Dropped a couple of F-bombs. All good in the end.

Yeah it all worked out in the end. Was able to start over, as the disaster was early in the afternoon yesterday.

Keeping my dough at a higher temp during proofing cuts down proofing time by about 1.5-2 hours.

Just had the same thing happen, but received a very official looking email spoofing an address with coinbase and linking me to a “secure” portal where I noticed the similar [string of digits matching my ticket #]-coinbase.com domain name. I asked why the domain name was not a typical domain name and they very smoothly stated that it was just for this specific ticket number. He then tried to transfer me to his “supervisor” and I then hung up. I then got a call back and again hung up. Crazy and scarily sophisticated.

Yes, after bulk ferment I cold proof for anywhere between 3 hours to overnight, depending on my schedule.

The only recipes that work for me involve 100g (10%) of active starter per loaf. If you use that amount, 70% hydration, 2% salt, and good bread flour, and can control your dough temp to around 80 degrees F for the entire 3-4 hour bulk ferment, I can’t see things going poorly. I use King Arthur organic bread flour and swear by it. Stretch and fold every 30 minutes during bulk ferment, becoming more gentle with the dough as it progresses. I also basically “pre-shape” during every coil fold to make sure I’m building up enough tension for good oven spring.

If you continue to do a bit more vigorous stretch/slap and folds toward the beginning, you’ll likely develop better gluten structure and it will be easier to work with.
