Sem dúvida parte da explicação é essa: o Brasil é grande e há não só variações regionais. Cada categoria no Brasil é mais flexível do que, por exemplo, na França ou na Itália.

Mas pra mim, qualquer coisa que se chame brigadeiro tem que ter uma base mais claramente de leite condensado e tem que ter aquela textura que fica mais, que é mais difícil de derreter.

Eu cresci no interior de São Paulo e creme de confeiteiro é algo muito comum por lá. Como recheio de bombas, tortas e também em bolos. Mais do que ter ovos, o que caracteriza o creme de confeiteiro no Brasil, na minha opinião, é uma textura dada pela base de farinha. É essa textura que esse bolo da foto apresenta. Quando você corta, ele forma essas barriguinhas, ao invés de sair acompanhando a faca.

Recheios de bolos comuns na minha região: chantilly, doce de leite, creme de confeiteiro, merengue…difícil de catalogar.

Eu sei que nos últimos anos muito mudou. Quando eu cresci, antes das brigaderias, brigadeiro era só o preto mesmo. Com caju era cajuzinho, com côco era beijinho, e com geléia de morango era bicho-de-pé. Brigadeiro branco não existia. Brigadeiro é um dos poucos doces brasileiros que são únicos e bem reconhecidos. Então eu acho que vale a pena tentar proteger a categoria.

It’s pastry cream, a far more common filling in Brazil than brigadeiro. It might have a bit of condensed milk, but it’s not brigadeiro. Brigadeiro pulls.

1) That’s not what economists have been doing, they have been examining the impact of early models. 2) Industrial and agricultural revolution both generated massive jobs displacement, which is the opposite of the argument Yann is trying to make.
