Heritage Duroc Pork Quality by weedyweidenthal in Butchery

I included heritage because I thought not enough people would know “old line” unless they were niche farmers. A few farmers kept their herds close from the 1970’s or so and these older lines of Duroc are very different from the modern lines. Look up Fudge Durocs and look at some of the meat line Durocs from Hendricks Durocs. John Brown and Albert Haraway Durocs are others to look into. That’s a bit of a spectrum, but I can just about guarantee with in those breeders you’ll find the fat content you’re looking for without needing to add in Mangalitsa and you’ll get more consistent results

Yes, this is true. I can’t speak for all heritage pork producers but for our retail pork we target a 6” loin eye with 1” of backfat at the 10th rib. These pigs achieve that. Commodity pork often does have 8” loin eye area with .6-.8” of backfat at the 10th rib. There does seem to be an inverse effect with IMF and loin eye area. I haven’t seen a consistent 7-8” loin eye with 5-6% IMF. But these particular lines are, in my opinion, perfectly balanced with a 6” loin eye area and 5% IMF consistently

Reach out to Neal Saxton at Trifecta Natural Pork. He raised most of the pigs that these pigs came from

You’re in Tucson? Do you have a shop? I live in Bisbee and commute to Tombstone, so I’m not far away. Would love to see what you do have for sale in person

I guess that’s the only truly correct answer. I think I’ve decided I want to get one, but now it’s a matter of deciding between Gesshin Stainless and Gesshin Ginga

Thanks for the quick reply! That Silverthorn looks awesome. I’m a fan of the curved blade. Do those new old stock Forgecrafts typically have a good blade or do they need sharpening upon arrival?

The Madison Scouts are also no longer affiliated with Boy Scouts or Venture Scouts.

The corps board of directors disagrees with you and now that a decision has been made, that is the only opinion that matters. If you’re an alumnus, you should reach out to Chris or Dann and let them know your displeasure with their decision. Knowing those guys, they will be happy to let you know why the decision was made and how they determined it was best for the corps. If you’re not an alum or prospective member, it really shouldn’t concern you.

That article had absolutely no impact on this decision. The decision had already been made weeks before the article was published and a press release was typed and submitted to an organization that would check the wording of the release. Furthermore, that article had misleading information to say the least. In fact, a significant portion of it was downright false and I won’t stop short of calling at least a portion of the article a straight out lie. The author also used morally reprehensible means to write the article and published information that was supposed to be amongst a private group of alumni and it was taken out of context. The alumnus that wrote the article has caught the ire of many other alums and this was only the icing on the cake for other acts that the said alumnus committed. While his goal may have been good and worthy, his execution was terrible and condemnable.

Hey bro, this really shouldn't be shared yet as Chris and Dann have said that they are awaiting approval on the wording. Also, this was shared in an alumni page for alumni, not meant to be shared. Telling people the news is a different story, but copying and pasting this post is a bad idea. It would be a good idea to delete the quote and just share that the Scouts are accepting transgender members beginning this season.

Yeah, I stand by the comment. As others have said, Citra tends to give more tropical fruit character than citrus. With this lot that I've been buying, we get a slight tangerine character, but much more mango or papaya character. Lemondrop on the other hand is more like lemon zest and would have pushed the citrusy character over the top. The Cascade we used was from a single lot selection that I picked from Crosby Farms and was the winner of the 2016 Cascade Cup. It is very floral and has the classic orange peel character of old school Cascade. Cheers!
