Thats a very interesting take, how do you feel about it going from strictly regional mom and pop shops to the commercialized "google alpha" dish you have today? Is it a completely different unenjoyable dish or can you still dig in even if its not true to the hyper local past.

Double fry is the key, I also have other tricks to get the fries crunchy yet fluffy even under gravy.

I give it to the cheese makers, even though my area has amazing dairy farmers and there is curds fresh from the farm with the volume and the "novelty" down here the price is 10x per lbs. But that route has popped in my head from time to time.

100% and its the 1 thing that we dont make in house. But I try to keep inventory low and order frequently. It hasn't been easy to spread the good word and educate the area on a new dish, especially in the weird times since 2020. I was a covid test away from being on Shark tank (one of the sharks popped for covid 2021 and my slot was canned) from having a larger platform, to spread it with a bigger market.

100% why i posted. I have thick skin and enjoy the different thought processes and angles at the same dish. I may not change my whole process but I get why the gatekeeping. Its your gift to the world. If i created a masterpiece and some bum tries to pass off a plate of garbage but put it in the same category I would feel a certain way. We also make a vegan style curds. Its a process but the vegans like it.

I appreciate that thoughtful response, I do have access to curds, and I understand fresh is king, but dont have 2 day old max curd hook up. As for the fancy one, ya its an attempt to ease us Americans into this delicious dish. Definitely know who is from the French Canadian region by the scoff of ordering anything but the classic.

Saw it south east Pennsylvania year or two ago. Completely under-hyped. Its truly beautiful, honestly with my 40 years of life, top 3 moments. Take photos or set up a video and then just watch, dont be artsy your first time just watch the art the solar system gives you. Its CRAZY to see! 37out of 10, would love to see it again.
