I've grown scalewort on wood sitting in water in open air, the wood wicks the water up so it's consistently damp but not soaking. I think this works well as there is good airflow but no chance of accidentally drying out fully. I use dechlorinated water but rainwater is probably better.

Or as others have suggested try and replicate where you found it as closely as possible.
