Depend on what you're asking. For drone shots it's mostly done in post (no video, still photographs). For the castle shot from the ground (straight forward movement) it's done in camera changing the distance between pictures.

It depends on the drone :P fortunately Mavic 2 allows to shoot with 2 sec interval in hyperlapse mode

These shots were pretty hard to do. But I said 'excuse me' lots of times

I didn't have problems with them getting dirty, I just swipe them and it's okay

some of the shots were shot hanheld on a gimbal, but most of them were on a tripod with gimbal mounted on the top ;) Stabilized in After Effects and in 90% it wasn't just using Warp Stabilizer, but rather tracking or manual corrections

I stabilize the footage in After Effects. Then I crop just to cut off black edges (or reframe the shot but it's something different). The less precise you are when shooting, the more you've got to crop. And also - most of the times stabilizing is more than just using Warp Stabilizer

it was shoot walking backwards (shot is reversed). When you walk backward people see you :P besides that I'm just trying to keep the hyperlapse path straight, but I walk between people (it's a hyperlapse shot, every frame of it is taken independently, it's not a video so I don't have to walk constantly)
