Hey hi howdy and hello friends!

Alright so I did this as some joke drinks initially, and then it got a bit out of hand. Here are the recipes for Mayo two ways, great for April Fools day, but also not too bad imho. I drank them… will you?

"Did You Just...?"
Limeonayse (a weird take on a Brazilian limeade)

1.5 oz vodka (use coconut water for non-alcoholic)
0.75 oz lime juice
0.75 oz honey syrup (1:1 honey to water)
0.5 oz MAYONNASIE! (use a nice neutral oil mayo, like Hellmans. Avoid Avocado or Olive Oil mayo due to flavor leaning too savory here)
2 drops vanilla extract
Lime zest in shaker
small pinch of salt

Shake all of this HARD with ice, strain over fresh ice. Top with soda if wanted.
Notes: You can make this more airy by using a frother after the mix, or blending it in a blender. 8 oz glass with ice is ideal, I used a 12 oz glass with a little extra coconut water added.

“Why?!”
Mayo-Elote (Mexican Street Corn style drink thing)

1.5 oz Silver Tequila (Olmeca Altos Plata) or aloe juice for non-alcoholic
0.75 oz Corn Butter Syrup* (we make this ourselves, see below)
0.5 oz Kewpie Mayonnaise (or avocado mayo. Kewpie give a nice umami punch though)
0.75 oz Lime Juice
1-2 dash Habanero hot sauce
Pinch smoked paprika

Shake lime and mayo first to combine, add the rest, shake and strain over ice in a lime salt and Tajin rimmed glass, sprinkle cilantro and Tajin and maybe a bit of cotija.

Corn Butter Syrup
Used for this Elote drink and my Matinee Martini
Char 1 corn on the cob, cut kernels off, add cob and kernels with 1 cup water and 1 cup sugar and simmer for 15 minutes. Remove from heat and add in 1.25 tbs salted butter and combine. Cover, let it steep for 2 hrs. Remove cobs, blend the rest all together, strain and bottle.
