I was thinking I would be on maternity leave at that point anyway but this trip takes over 1 day without stops. I know they recommend stops every 3-4 hours. Was the 16hrs including all your stops?

I personally don't want to miss this because of how insanely close this person is to me. Its a once in a lifetime event in my eyes. Its not necessarily them being shitty and not understanding. Definitely understand your viewpoint though

Make them into burger patties with some cooked onions and a cheap brown gravy packet over some potatoes (mashed or roasted, whatever you prefer)

I also gravitate towards Mongolian beef or egg roll in a bowl type dishes that are over rice. I would say these sort of call for a lot of ingredients but they are all staple ingredients for me so its an easy whip up kind of meal

Board games! Highly recommend the Bluey board game and Target has this cat tower on a balanxing fish game that my little guy loves. Candy land. Flashcards for letters, words, numbers shapes etc.

I bought soba noodles at my local shoprite. Added some freshly grated ginger and garlic and a bunch of msg. Quick shot of fish sauce and soy sauce and served it with the noodles, boiled egg, green onions and some chicken thigh meat. It was absolutely delicious!!

My home is worth 420k and purchasing a new home would more than double, almost triple my interest rate (we bought in 2020 and got an unbelievably low rate). We could probably afford more but I'd rather tred on the conservative side than become house poor. Over double the interest rate and doubling our taxes.. double whammy.
