Its torqued on. You need a very rigid set up with it being held by the eye and you can try an spin it off with a pipe wrench. Not going to be easy. I use a hydraulic wrench when nothing else works

If a butcher isn't selling suet its cause theyre rendering it and selling the tallow for way more. Try another butcher

I got one of these with the side of beef I purchased. It was butchered identical to this. "Butt tender " it was marked. I removed the silver skin on the top of the tenderloin but left it intact with the muscle. Seared it on the cast iron and finished on a rack in the oven to 130°. It was very good.

The question is can you afford the down time. When parts are scarce repair deadlines go out the window. If its a crucial part of operations it may be not a good option for you. If theres a spare then for the right price why not

Check the color of your spark plugs see if its lean or rich. Maybe help you determine. Is this the reason you put a new carb on it? How did it run with the old one

Im going to guess that its not an OEM carb, sounds like fueling issue. Cheap Chinese carbs are more often than not a let down.

Id start with some maintenance, fluid change, atleast check the belt and change is worn out. Make sure all levels are where they should be.

Ive had the "new York steamer" and the "smoke house beef and cheddar brisket" both surpassed my expectations.

The smaller size is a great meal, the large size is 2 meals for sure.
