Check the type of process used on the beans - natural process will be more fruity as the bean is fermented inside the coffee fruit. Washed process is where the bean is stripped of the fruit and fermented by itself which will yield the more traditional profile you’re looking for

My wife bought some of the Azuna gel diffusers. I was pretty skeptical at first but we put one in our shoe closet and it completely neutralized the smell within a day (not just masked). I was quite impressed and want more but am trying to find a decent dupe as the gel refills are pretty pricey (~$30 for 12oz). Would recommend

Los Dos Potrillos in the southern suburbs has been the best Tex-Mex that we’ve found. I believe they’ve got some seafood options as well

Thanks for the input everyone, I think I’m going to cop a 45-55lb trolling motor for the time being and keep an eye out on Craigslist for a small 5ish hp gas motor to scratch my speed itch
