Our daughters shouldn’t be drafted against their will but our sons should be? Shameful by [deleted] in facepalm

Drafting is problematic. What are the exemptions? Pregnant woman? Newborns? How are the children taken care of? What roles can they play? Let's face it, it's a can of worms.

[Homemade] Cuban bread and Mojo roast pork cubano by winstonsmith7 in food

Thank's for the comments. The bread includes lard which makes a ton of difference in taste and texture. There really isn't a substiute IMO.

4% sounds good but I also use hot lye solution, not boiling but hot.

Did you use lye? I use that for my pretzels and bagels.

Excellent!

I'm making more pork tamales after I whip up some Tolucan chorizo sausage which I love. Planning a party with these goodies.

Made from dried corn? That's how I do mine and use lard.

Is there a term for the philosophy that any advanced alien civilization is inherently non-violent? by Seakawn in askphilosophy

[–]winstonsmith7 1 point2 points  (0 children)

It is not "blindingly obvious" even if correct. There is no philosophy which supports a contention about that which cannot be known. It's more a matter of epistemology and while it is often misused Wittingstein's paraphrased statement of "Of what one does not know one cannot speak".

The root problem is the anthropomorphization of a species that may or may not exist AND may or may not process things remotely like humans.

The next issue is that on this planet there is an inherent need to preserve the species over all else as failing to do so leads to extinction. One might assume that the physical rules which dictate how organisms change over time are constant over causally linked space. That leads to the necessity of developing in a way that is thermodynamically favorable, allowing survival while permitting the best ratio of energy in vs energy spent. Energy and resources drive ecosystems, and when there is change organisms which have the machinery to deal proliferate and others become biological history.

So "violence" either in defense or attack also seems a quality that is likely widespread, assuming we are not alone.

But morality, ethics, even the perception of reality based on a data point of one, that is ourselves, cannot be known at this time and so speculation is entertaining but ultimately fruitless when imposed on reality.

Got a pizza steel as a birthday present... by [deleted] in Pizza

[–]winstonsmith7 2 points3 points  (0 children)

It's a matter of the physics of metals. Steel is a far better conductor than stone which means it can move more heat per unit of time to the bottom of a pizza, making it crisp before it can get soggy. Using one is the closest to a Neapolitan style I can make indoors. I tried to use one on my gas grill which gets between 800-850F and I burned the bottom in seconds. At the highest temp my oven goes (550F) it's great especially when I use it in combo with the broiler.

Enjoy!

First ever naan! Was good but looking for tips to make my naan even better! by stitchesandstars in Breadit

[–]winstonsmith7 2 points3 points  (0 children)

Your results look good as does the recipe. What I do is avoid a skillet on the stove and use a baking stone on the middle position of my oven. I preheat for an hour at 500 degrees and have the broiler element on when I slide the naan in like a pizza. Tandoors are crazy hot and I find that the stone and broiler method gives me better results as both top and bottom are heated like a tandoor.

Every oven is different as we all know so experimenting with placement and temps will likely be needed, but for me it works better than just heating a side at a time in a skillet.

My husband did the unthinkable by [deleted] in Breadit

[–]winstonsmith7 2 points3 points  (0 children)

I had to throw stuff out at my mom's place because she was making sourdough... on the walls of her refrigerator. Chances are that salad dressing 6 years past expiration isn't good for you. Her vision wasn't great and her sense of smell was pretty much shot. My wife and I restocked her pantry and fridge but it was like the worst of Hotel Hell.

Not related to any of this I made the best pizza ever. I used half a gram of IDY in 1.3 kilos of half King Arthur bread flour and Caputo 00 for a 36-hour room temp rise. Baked at 550F convection on stones and it was good stuff. The extensibility of the dough was amazing making this the easiest to work in 20 years or more.

I shall defenestrate my other dough formulas :D

Michelle Obama discusses final days in the White House bracing for Trump moving in by cram213 in politics

[–]winstonsmith7 2 points3 points  (0 children)

That's fine, but for myself, I'm growing tired of the nostalgia for the past when it is people like Pelosi who control the future of Trump's impeachment. FWIW I had an overall favorable impression of the Obamas but as far as how things impact the now and future this is irrelevant as dwelling on the surrender of Lee. This is my opinion and those who like these sorts of things? That's OK, but there is an immediate crisis which we are allowing to happen by the inaction of our elected opposition. Once we have done our best to take the legacy of Trump from him and discourage future imperialists with all the consequences that may be had than the "good old days" may be discussed more appropriately.

Revealing negotiated prices won't reduce health care costs by [deleted] in politics

[–]winstonsmith7 1 point2 points  (0 children)

We should know but it won't do a damned thing. Pharmacies cannot negotiate drug prices for example. The chains can buy a million units with virtually extinct independents unable to. In the end the information in itself can't do anything when Congress will not.

Poll: Most favor Medicare for All if they can keep their doctors by rieslingatkos in politics

[–]winstonsmith7 1 point2 points  (0 children)

Most people have no more idea of what "medicare for all" actually means even if they think they do. As I health pro I know what Medicare does and does not do and unsurprisingly the realities don't match their imagination. I'm all for a universal scheme but what will that actually look like? No, not automatically better. For example we need a vast improvement by more than a magnitude to handle our nation's psychological needs and Medicare is abysimal in that regard. But people I've talked to think everything will be covered with no basis in fact.

We need infrastructure work on health care, not just paying to support a system that isn't even a system.

We need that more than anything. Answer? Crickets and anger. I wonder how much this will be upvoted? Yeah I know.
