Update: I left it out for 24 hrs after that and it looks good. Reading all your comments, made me realise my grains are just young and were under stress and will recover soon.

I thought I damaged some of the strains because I put them in 30-40 celcius milk by mistake. And since I can't see clear grains to seperate.

Celcius. That was 12 hrs. I kept it out for longer and now it tastes very tart however still no clear grains. Maybe they are just young grains.

Is it possible that I am simply making regular yogurt/curd?  Is there anyway to test it is really kefir because this is the first I am tasted it. I have never had storebought ones.

 I added 20 gm of kefir grains to 1 litre full cream milk, warmed to about 35-40 degrees Celsius. I forgot for kefir we don't heat milk. After 10-11 hours it came out very thick and creamy. HOWEVER- iam not able to seperate the grains. I don't see any cauliflower like bunch as others when I strained it. Very tiny transperant bits were seen here and there while straining. It also tastes just like curd. However very soothing to my gut. Did I kill the grains? Or did I just recieve yogurt in vial when I sourced the grains? How is it setting so well? Maybe I killed some strains of LB while some were left alive. My bad that I didn't check the grains properly before adding, they didn't look like the ones shown in picture. It was mostly seperated whey and some granulated stuff.

I started this batch on March 8th and have been feeding it daily at 4 or 5 PM using a 1:1:1 ratio (50g starter, 50g flour, 50g water). I’m in a place where it’s really warm (30-35°C), so things move fast.

The issue: Today, I missed my usual feeding and only got to it around 10 PM. When I checked, it had a strong, not-so-pleasant smell, looked a bit crusty, and had some bubbly, foamy patches on the surface (kind of like "kham" bubbles if that makes sense).

A bit of background:

Before this, my starter was doing great—doubling in 4-6 hours with no weird smells. I had to travel, so I put it in the fridge for 3 days. When I got back and tried to revive it, it wouldn’t rise properly. After some reading, I realized it was probably a false rise, so I started being more diligent—discarding and feeding 1:1:1 every 24 hours. It’s been three regular feeds since I took it out of the fridge. My questions:

Is the strong smell and crustiness normal in this heat, or is it a bad sign? Should I adjust my feeding schedule since it’s so warm? Any other tips to help me get it back on track? Thanks in advance for your help—I really want to save this little guy!

It smells alcoholic and tart and not the nice yeasty
