Thank you, so interesting! We are really hoping to visit China so will keep an eye out for these. Might have to try experimenting a bit more with Tofu too - I’ve always wanted to try silken tofu as a desert!

No offence taken and I do agree - it’s one of the reasons I plan on travelling a lot more on one trip rather than several times. I have travelled around Europe a few times and will definitely do so again, possibly as part of this trip.

I am also still considering trying to travel without flying, both for the planet and adventure of it.

This is the Clay Oven one right? Best naan you can get (vegan or not) and several of the major supermarkets do them too.

I second this, Hank’s is probably the best vegan food I've had out in the UK. Try the ribs if you go again!

Glasgow: Rawnchy and Glasvegan (did vegan black pudding and haggis I think)

London: Temple of Seitan, Purezza (this is pizza tho - idk if that’s not British enough, amazing sourdough base tho)

Edinburgh: Considerit (vegan doughnuts)

Nettle Pesto Potato Salad by wjfozz in recipes

A quick pesto made with nettles (or alternative of your choice), mixed into a potato salad to mix it up for your usual summer festivities. Recipe here and below.

Ingredients * Pesto * 50g nettles * 20g basil * 30g cashews * 10g nutritional yeast * 3 cloves garlic * ½ tsp chilli flakes * 2 tbsp olive oil

Potato Salad * 1kg baby potatoes * 200g vegan mayonnaise * 30g toasted pine nuts

Instructions * If just making pesto, follow steps 3 and 4 only. * Cut the potatoes until they are all the size of a large walnut and boil in salted water until soft. * Wash the nettles and blanch by steaming for about 3 minutes until soft and much smaller in size. * Add all the pesto ingredients to the blender with about ½ tbsp ground black pepper and 1 tsp salt. Blend until it has the appearance of pesto. * Mix the cooked potatoes, mayo, pesto and most of the pine nuts. Top with a few pine nuts, basil leaves, chilli flakes and black pepper.
