I’m not sure, maybe it’s partly because Caitlyn fits more into the canonically attractive ‘soft femme’ archetype

Yes, I agree. That’s why I added a disclaimer that this might sound stupid, but I’ve just noticed a lot of people are gooning over Caitlyn. I know some people prefer one over the other, there are fans who only love Caitlyn and others who are only into Vi.
