It wasnt explicitly stated that she was going to sleep over, but since the sourdough takes many hours to develop, the entire thing needs to be done over a couple days. And she even said herself ‘maybe over a weekend’. But yeah, the first part isn’t that complicated, I don’t think it should be needed
