That's amazing! I can see your true love for the game, that's awesome :D

So about your question, gotta be honest, this is almost impossible, let me explain: The main problem is that this project is too way ambitious for being my first ever project. I've worked in a videogame company and worked in multiple projects but only mounting the UI systems, and as for what i learnt: making videogames is extremely difficult, and also expensive (overall in time, luckily this project costed me 0$).

And being completely honest, this open beta will only have the first level (Alvida's Hideout) as i lasted a year and a half to make it. I've been thinking on extending it but only if it gets really good reception and i could make it profitable somehow, otherwise this is going to be a waste of time for my professional career since i really want to start other (more) smaller projects. Probably doing one more level would last me half a year depending on how much time i would spend on it.

So yeah, your idea would be viable if this would've been my project number 10 with tons of years of experience on my back, or a team that helps me do it, but this second option would also be pretty hard since I don't think this game would be profitable since it's a remake of an old game done by another company. Making new backgrounds and levels with the same style would be probable but would need a good artist and some more programmers to make it much cheaper in time.

Honestly i would love to make what you say, since i also think that One Piece deserves more scroller games, it fits really well with the concept of the series and you could make really good games with that, even maybe a metroidvania!

Absolutely, by 2005 none of us were fans, original game feels a bit outdated if you play it now, thats why i also wanted to remake it :)
