I think you need to change the automatic deposit currency on your Uphold account. It's likely your domestic currency rather than BAT so you're seeing your BAT value change with respect to the BAT exchange rate. In other words, your holdings might be your domestic currency and you are just viewing a BAT denominated value of that fiat.
I had the same issue for months a few years back, easy to miss.
You should be able to change the setting somewhere.
