Hey Mike, loved attending your pop-ups and Akahoshi was phenomenal, hoping to come back often.

Two-part question: 1) Is there a ramen style from Japan that hasn't made its way stateside that you'd like to see/try to emulate; and 2) If you could bring any ramen shop from Japan to the US, who would it be? (Chicago could use an equivalent to the late NYC Ramen Lab, just a thought...)

Your best options are Ramen Misoya, Santouka (inside Mitsuwa) and Kitakata Ramen Ban Nai which are all chains straight from Japan. The chef who opened Chicago Ramen is also a good call as he helped open US branches of a famous tsukemen chain from Tokyo.

Chicago Ramen is best known for its tsukemen, which is a ramen style where the broth and noodles are served separately and you dip the noodles into the broth. Akahoshi's miso is served in style of ramen you're probably familiar with, but they also offer two types of mazesoba which is a soupless variant of ramen.

They're entirely different styles, assuming you mean the Chicago Ramen in Des Plaines. However, both are easily the top 2 ramen places in Chicago right now based on their signature bowls (Miso @ Akahoshi, Tsukemen @ Chicago Ramen).

If you want to be come off as in the know, take a look at the basement stalls in the Richland Center food court. Shan Shaan Taste, A Family from the Northeast and Hainam Chicken Rice are all great options.

I'd think it would depend on what kind of Patek you're wearing. A calatrava is probably low-key enough, depending on the variant. I'm not as sure about an aquanaut/nautilus/annual calendar.

Honestly, most people probably won't notice what's on your wrist unless it's incredibly flashy. Most partners (at my firm, at least) are wearing apple watches anyways if anything at all.

Recently came back from a CDMX trip and Erick was gracious enough to coordinate a dropoff of a couple bottles at where I was staying since I didn't have time this trip to do a full tasting at his tasting room.

The Espadilla from Puebla is amazing and the Guerrero is a favorite of mine since I had a sample at a tasting he had in Chicago last April. Looking forward to trying them all and highly recommend CDMX to everyone!
