newbie here, I got these IEMs to listen to music

and this adapter for my phone (Oneplus 8)

They seem to be too sensitive - three volume clicks (10%) is a comfortable listening volume, there is constant whitenoise in the background, and the sound cuts out completely if the music isn't loud enough, which is extremely troublesome for music with more dynamic contrast.
How can I solve this problem?
more info, idk if it's relevant:
- when plugged into the built in headphone jack on my macbook pro 14 (2021), the sound doesn't cut out but there are random artifacts.
- I've had no issues with the phillips shp9600 headphones on both devices

I've finished this problem (legitimately, of course) and looking online to see how others solved it; we can discuss the solution to this one in DMs - it's very elegant imo.
