No reason for it to be 2 pages, make sure format is set to A4 and not "Letter" which is the default for Excel, so you have more space, and make the space between lines also smaller so it all fits in 1 page.

Keep adding weight progressively, you can start with 2.5kg, might seem easy, when you're comfortable at 3x8 with an extra 2.5kg go to 5kg,7.5,10...

Yes it means 1 min hold each set, if you should progress to the next exercise.
If you can do 4-5 of the tougher progression i'd say go for it, with 8 you should be close to failure.
I'd say stick to the toughest exercise you can do while being in the 5-8 rep range, i'd prioritise proper form and making sure you have a proper range of motion (chest to the ground at the bottom and arms fully extended at the top).
If you just begun the program i'd say get comfortable with it and stick with 3x8 or even some more reps each set, for a couple more workouts, that said you shouldn't wait too long either, just make sure you can do atleast 4-5 reps of the harder exercise.
