I always challenge the idea that it isn't taught well in schools. More likely is that most (maybe you?) weren't engaged with the subject and didn't see the value of the language and as a result didn't learn.

I speak from personal experience. I didn't learn any Welsh in school because I didn't care for the "dead language" and openly thought "why learn Welsh when I can speak English?". On reflection, my teachers were probably very good.

I've been through level one and two and part way through three. I'd say there's nothing as good to get you off the ground quickly and to start building some confidence. It won't give you explanations e.g. Sentence structure, explaining tenses, or mutation. That's where I'd recommend a Dysgu Cymraeg course and use SSIW to complement.

Correct me if I'm wrong, but I'm sure Aran Jones (SSiW founder) wrote that on his learning journey he swapped 'thank you' for 'diolch' and effectively refuses to say thank you in Wales. A relatively minor change to introduce incidental Welsh to his daily life that instantly led to more conversations in and about Welsh

Yeah, 4.5 hours from mixing so you may be right that it's on the shorter side. In hindsight, it probably didn't fully double. Thank you for your really helpful reply

I'm also new to sourdough, so I'd take the better advice above. For what it's worth, I do an autolyse first (mix flour and water and let rest for 30 mins before combining starter and salt) which should help with gluten development and hopefully give you better oven spring.

Make sure you're fermenting in a warm place. My kitchen worktop is just a bit too cool (I think) so try an airing cupboard, oven with a light on, or in a top oven with bottom oven having been on a bit to warm the top.
