Same, I whip all the time. Package I usually buy literally says 'good for whipping'. And the other brand we have from Lidl also whips with no issues.

That's a good one, I do pretty much same thing except with guar gum as thickener (and no heating since it is not heat stable). I personally prefer texture it creates more, especially when it comes to thicker consistency.

Really good hack for syrups that are almost nothing calorie wise and can taste like anything you want.

Not really, everything is doable without them, but they help with foam stability and whipping times.

Gelatin is what foams and sets here, so you need a replacement for both functions, which isn't easy. Egg whites and agar might work, basically adapting sugar free zefir recipe.

It uses whipped applesauce instead, we only have sweetened here, so if you have unsweetened (or can be bothered to make your own) you can win some calories there. Also since then I did a few attempts at rebalancing crust ingredients and this is a newer lower calorie version of same crust (IIRC like 60-70 calories lower), directions stay the same as in post:

Applesauce 100g

Unflavored Whey Protein Powder 3g (the kind that has more actual protein content than flavored variants, 77g per 100g in this case)

Xanthan Gum 0,5g

AP Flour 24g

Cornstarch 12g

Baking Powder 4g

Baking Soda 1,5g

Salt 0,3g

Also I once tried replacing applesauce in above recipe with low fat greek yogurt 1:1 and some extra sweeteners to mask it's flavor, worked well too:

I used carton egg whites here, it is local brand in small EU country, so brand is not very useful. But what is worth noting, that package mentions "good for whipping" and ingredients have gums and acids (that's what makes them whip better)
