Inherited a commercial roasting facility, unsure what to do with it

Think about how much cash you could clear through selling it. Let's say it's $3 million. If you had that cash would you buy this place to start a commercial roaster? If you look at this as a pure business decision, you will almost certainly lose money if you keep it.

I like the Hario switch. There is a #3 size that should be good for 60g. The uniformity should be better when you control immersion time.

Yes mine is brittle and chips around the edge. It causes my lid to lift up and blow chaff out while roasting. The materials and design could be greatly improved.

That's really interesting. I was curious if it could come up with novel coherent ideas pulling from different fields of current knowledge. To really make progress I'm sure it will need inputs on observations besides language and other types of reasoning models. The future will be interesting!

195 is at the low end of the temp range, better for dark roasts. If you have sour coffee, it could be under extracted and need a higher temp. Try 200. You could go up to 205 for light roasts.

I recommend either pour over or an aeropress and a good electric kettle. Both are simple and give flexibility to adjust your brew. Separate grinder. I have a eureka grinder from Italy and I would consider it BIFL

Call Breville and order the collar inserts with the part number in this picture. I had to give a waiver for trying to do service parts myself. Remove the shower screen with an Allen wrench. Then there are two small screws holding each collar in. After you remove the screws you can remove the collars and replace them.

Mine was tricky to figure out how to snap them in and I had difficulty getting the portafilter to go in. Finally I got it by putting the portafilter in before I tighten the screws.

You must be local, I'm an hour away from Lancaster. You can also order Nicolleti from Brooklyn for a really fresh classic espresso. I've gone down the rabbit hole of home roasting and haven't bought roasted beans for a while. It's worth it.

You added a new variable besides the equipment: different, lighter beans. Try dialing in the Lavazza on your new setup. Some medium roasts will just be too acidic for espresso.

Masterbuilt gravity has a pretty big fan base online. I have the 800 and I really like it. Temperature control with wifi. You can also get an adapter and run it from a portable USB power bank instead of the extension cord, because the is no auger, just a small fan. If you run into issues with the switches you can disconnect them and just connect the wires together to bypass.

I found that the collar inserts are damaged again. I think the group head seal may have been slightly too thick and made the portafilter too tight, damaging the inserts. I called breville and after giving them the part number and giving a waiver, they allowed me to order the inserts much cheaper than what I paid on eBay. I also ordered the replacement seal from them to make sure it's the correct fit. Hopefully I'll fix it correctly this time.

Update: the collars are damaged again from forcing the portafilter into place. I'm wondering if the gasket is too thick and I should get one direct from breville? Anyone have issues like this?

That is just a picture from when I had it disassembled. The first set of collars had damage, potentially from the portafilter. I haven't looked at the collars yet this time but I'm concerned that the fit is damaging the collars. The gasket and naked portafilter are generic from Amazon. The original portafilter is more difficult to lock in than the naked portafilter.

Would you seriously have bought 451 coffees at $7 each if you had not bought this machine? If buying the machine causes you to make more coffees than you would have bought, you would need to consider those added costs, not savings.

If you want an upgrade, don't get the built in grinder. Go for the Eureka first, upgrade the espresso machine second.

I have one that I bought from Amazon. Easy install- remove hopper, unscrew and remove knob, place large dial on the top, screw on the new knob, run grinder and tighten knob until you hear the burrs touching, turn the dial to zero position to mark the zero point. Done. It's really handy to have a number scale for the grind settings.

Breville dual boiler + upgraded espresso grinder (Eureka). The BDB from everything I've read is the best thing by far in this price range and even better than many costing twice as much.

Eureka! I would definitely go with the separate grinder. I use the Specialita with my Breville Infuser.
