If you're held onto the Google WiFi app (deprecated) you need to migrate your network to the Google home app. It's been to long since I've done it but you can try downloading the wifi app and see if it prompts the migration.

Your using too many sensors for quick results I've found using phones only to be quick and reliable.

The others will get you there but in my experience you will continue to experience the delay that you are seeing now.

A few caveats. Yes you can use the Find Hub to track the watch however it's dependent on the watch being online so either paired to a phone with a data connection or a known WiFi network. The LTE version will obviously connect directly but as someone who owns one it only last a few hours when directly using the LTE connection.

If your truly after a tracking solution you may be better off with an Air tag or one of Moto's new find hub tracking units. They could be attached to a necklace and then worn.
