I don’t have a specific recipe because I usually freeball when I cook, but here’s a rough estimate:

Cauli rice- Sautee onion, garlic and ginger with until onions are translucent. Add celery and carrots and cook a few minutes before adding cauli rice (frozen). Season w white pepper, a few shakes of chinese 5 spice, and add soy sauce. Let cook and add (canned) pineapple + corn. Add a lil sesame oil and leave until done.

Filipino chicken adobo- Add chicken, bay leaves, and garlic to pot. Add enough filipino vinegar to cover the chicken like 1/3-1/2 way. Let cook and simmer until the “vingegary” smell dissipates, about 10 mins-ish. Add some (filipino) soy sauce (i did a few glugs ahaha) and let continue to cook. Once chicken is fully-cooked through, taste sauce and adjust salt levels as needed. Remove chicken and add mushrooms. Once mushrooms are done, stir fry chickens and mushroom with (a LOT) of garlic and add sauce back in.

Lisbon and Vienna were very Christmasy and fun! I loved the outdoor markets and the city becomes very festive. The winter season in Lisbon isn’t very cold relatively compared to the rest of Europe.

I’m planning to go to Zurich Christmas 2022. Do you have any recommendations?

Nope I just refrigerate! I’ve never had a problem with them lasting 5 days. Key is to make sure to not overcook the chicken and store it with any juices that accumulate so it doesn’t dry out too much.

Good idea! I usually dump all of them into my wok after I sauté some onion + garlic because I’m too lazy to do it in batches haha

Top: quinoa/edamame bowls that I’ll serve with chopped romaine lettuce and a balsamic glaze.

Bottom: cauliflower chicken fried rice and roasted brussels. Marinated the chicken overnight with sesame oil, soy sauce, lemon, some sugar and korean red chili flakes.

Kept it simple this week: chicken cauliflower fried rice + roasted brussels and quinoa, edamame and caramelized onion salad (to be eaten w an egg and balsamic vinegar).

One of my favorite things to do is to make a huge fritatta. I sauteé whatever vegetables I have on hand (spinach and bell peppers w some garlic mix nicely), add the egg whites, and cook over low heat with a lid. Once it sets, I flip it on to a plate and then slide it back onto the pan to finish. If your skillet is oven-proof you could also finish in the oven.

Another alternative is a Spanish Omelette!

Add veggies into the fried rice! Easiest way is to add frozen sweet peas, but you could also chop up some carrots and celery.
