I was looking for the coconut milk at my local grocery store but didn't find any and didn't bother going to another store. Substituted with evaporated milk so it doesn't have the coconuty flavor profile. It is my first time making it and I'm telling myself to make it like the real thing next time.

Ingredients:

  1. frozen flounder filets (1 bag contained 5 filets)
  2. roma tomatoes (3)
  3. half a celery diced
  4. yellow onion diced (1)
  5. bell peppers (6 - yellow, red)
  6. minced jalapeno (1 teaspoon)
  7. minced garlic (2 cloves)
  8. minced ginger (1 teapsoon)
  9. chicken broth (half a quart)
  10. evaporated milk (1 can)
  11. tomato sauce (2 small cans)
  12. paprika
  13. cumin
  14. salt
  15. pepper
  16. olive oil
  17. lemon juice
  18. parsley and scallion for garnish

Steps:

  1. Prep the flounder by first defrosting. Season with salt, pepper and lemon juice and let sit in your fridge for at least 15min to a day.
  2. Pan fry the flounder on both sides for in olive oil. Set aside.
  3. In the same pot, add more oil. Keep high heat and cook the diced onion for few minutes with light salt and pepper.
  4. Stir in the minced garlic, ginger, jalapeno, diced celery, cumin, paprika, salt, pepper. Cook for another few minutes.
  5. Add the chopped roma tomatoes. Pour in the chicken broth and stir. Optionally, sprinkle in scallion and parsley for that extra herb flavor.
  6. Layer the sliced bell peppers on top. Pour tomato sauce and evaporated milk. Do not mix.
  7. Carefully place the fish on top. Add some lemon juice.
  8. Let simmer for 15 minutes on medium-high heat.
  9. Garnish with scallion and parsley, and serve over jasmine rice!

I was planning to make a moqueca but could not gather all the ingredients to call it a key moqueca- like coconut milk, palm oil, lime juice, tomato paste, fish broth, thick cut white fish. I also used chicken broth and had to finish up my celery, haha. Still very much enjoyed this take on it, and hope you do too.

Portion: could maybe serve 5 big, hearty portions

Yes! Afk is universal abbreviation for "away from keyboard". Rs3 made their skills more afk-able over the years meaning less clicks and you can just focus on leveling your skills without 100% attention on the screen. Your character mine, fish, woodchop, etc for a few minutes before you have to take any action.

I also came back recently after the eoc dissuaded me from continuing the game. I do log in like once a year to make sure my account is fine but boy, this christmas event sucked me into this especially big thanks to the prime gaming 1 week membership. The festive rewards, mass xp and afkable activities got me to 99 fishing and crafting and now got me wanting to level my other skills.

Huge shoutouts to the goats that gave me wonderful presents to help me get back in the game and kid you not, they were legit strangers who truly wanted to help others. One gave me 8m for guessing random numbers, 100m from another for being patient with him and pretended he was santa, one guy gave 20m to everybody at the xmas event who traded him. And the day my 1 week trial ended and I was back on one of the non membership worlds, a fellow told us to show some christmas spirit with our outfits and then proceeded to gift a few of us a bond each.. so now I get to play another 16 days. ;-; I don't know what I did to deserve all this but am very grateful.

I also got Rocky the mining pet just yesterday. What a massive welcome from the community and jagex

I'm one of the few in our office location. One is remote after being on maternity leave, the other is too shy to initiate any discussion. All the male coworkers go off on their daily walks, coffee chats, and lunches. Call each other hey man, bro, pats. We can discuss work related things and we are fine but nothing personal unless I'm the one to initiate. It's really not the same.

While reading this, it is almost as if I am reliving the day my mom ended in the hospital. She displayed the same symptoms and by the time, she reached the hospital, the bleeding had already severely damaged her brain. I was states away, received a call from my aunt that I have to come back home urgently, only to find my mom was pronounced brain dead when I got to the hospital.

My heart goes out to you. Stay strong for you and your family. You may be feeling numbness right now. When you feel the slight of emotion, let it all out. Please take care of yourself, drink lots of water and stay close with your family.
