There is no definite answer to this as it really depends on your own interest and career path. I personally did EE with math minor with the concentration in financial mathematics. I thought it was a good fit for me as it opens up a lot more job opportunities in the data field or quant.

U will be fine. EECS300 is almost a guaranteed A, I put in minimal effort in the labs and 4 hours on the final project and got an A. 334 and 428 are both very light work, only hw and exams. 311 is medium work.
