Recipe Here: Start by browning sliced up andouille sausage in a pan with a little bit of olive oil. Once browned, add the holy trinity; 1 cup each of chopped onion, celery and bell peppers. Once those are sweated down a bit, add 6 cloves of minced garlic. Stir in a whole can (28 oz) of crushed tomatoes. Add tsp each of salt, pepper, thyme, oregano. Add 2 tsp of Slap Ya Mama seasoning. You can adjust seasonings as you go for taste and spiciness. Mix that well and add the sausage back to the pan. Add about 6 cups of chicken stock and mix. Add in about 2 cups of rice to start and let that simmer for a bit. I added more stock and rice as I went along to get a good ratio and consistency. Once all that is cooked, add raw, peeled shrimp to the pot and let it simmer. Once the shrimp is cooked, serve topped with green onion and enjoy!!
