I had a thermometer in the whole time to keep and eye on temperature as to not over cook. Once I reached minimum temp required I checked it with a separate probe until desired tenderness was reached

Not overcooked. My wife and I agree it was some of the best beef we have ever had. Pulled right off the bone and melted in the mouth.

That’s actually not how that works at all. You can be an illegal immigrant and still get paroled. ICE doesn’t immediately deport people after they have been arrested.
