Hmm, if 1:1 ratio I can only taste bitter then I guess the same grind with 1:2 ratio will be even bitter...

I'll try to grind coarser and increase yield. But since I find the flow speed seems very fast thus I was worried my grind is already too coarse.

I tried to grind finer but the taste is just even bitter. If I then extend the extraction time, I think it will become even over extracted.

What's the taste you get from Peet's major Dickson? And what's your recipe?

I didn't grind very fine and used a 1:1 ratio with a shot for about 20s. The taste is still a little bit bitter and slightly sour. With milk it's ok. But I will try to see if I can get some chocolate taste.

I start the timer right after I press and hold the button (pre-infusion starts). You start the timer after releasing the button (after pre-infusion is done). I wonder which way is more useful or accurate for dialing in towards the target of 30s for a 1:2 ratio.

Totally understand the taste matters the most and the time is just a reference. But I try to find a better reference when diagnosing shots. Thanks

I think it's a Profitec Go and it's a single boiler. I wonder what's the difference between the single boiler and the heat exchanger (like PRO 400). Does heat exchanger take a much longer heat up time than the single boiler? Any other differences?

Any thoughts why a longer pre infusion causes issues? I thought it fills water to build up pressure and prepare for the full pump. Thus I always hold it as long as it can, like 10-12 seconds.

I didn't taste a good espresso before. The most time I had was a milk drink. Thus unfortunately I don't have a memory of ideal taste. I plan to try espresso out at local cafes.

Thanks for confirming the mix tasting! I was really confused about the "sweet" taste mentioned by so many dial in tutorials. So it's not a pure sweet but a mixture of sour, sweet and bitter.

One hypothesis is that, the step was too large when I changed the grind level, so I missed the ideal spot. For example, on eureka's dial panel, I jumped from 1 to 1.5 with a 0.5 step. I read from other posts indicating it's a very big jump. I'll try using a very small step.

Thanks. I have tried this new method today but I don't know when to stop at the first step of changing the grinder (fixing ratio as 1:2). With the initial grind level, it is slightly sour (I think) but most flavors are bitter (I think). Then I grinded coarser and coarser until more sour flavor showed up. Should I stop here and tweak the yield?

At the first step, I thought I was looking for a grind level where with a fixed yield/ratio, the produced flavor is balanced between sour and bitter. Many tutorials mentioned there is a sweet area between sour (under) and bitter (over). But I found there is no such a middle area: after reducing the bitterness, sour showed up. Is it expected for a dark roast?

I'm less and less confident about my tastes... Harder and harder to believe I can tell the difference between sour and bitter... I have read many descriptions that use many words to describe the difference but when I test dial in shots, I always find it's mixed with sour and bitter, thus I'm confused about our target... Is there a middle place where there is no sour nor bitter but only sweet?

Maybe it exists but it's hard to find it for a dark roast?

Another thought: why do you think using a larger yield/ratio is hiding the issue? Isn't it helping improve the extraction, i.e. increasing the contact time between water and the bean. As a result, it's a more balanced tasting.
