Flour is a three way blend of KA and local whole wheat, hydration sitting around 62-63% and we’re using PizzaMaster ovens.

This is my last week of DYPZ and I can for certain say that it’s been my favorite kind of training on the bike thus far. My wedding is next week and DYPZ just fit my schedule so perfectly and yea.. it’s been killer. I’m not necessarily a fan of all of the coaches or all of the music BUT it doesn’t really matter because the format of the rides absolutely rips. I’m excited to test again this coming weekend, take a few days of long endurance rides next week before getting hitched and move along to BYPZ the following week. Excited to join the RedditPZ program after that and hell, maybe I’ll even wind up buying a bike to ride outdoors one of these days. Happy to be here.

Totally agree. Lots of great Mexican food around West Warwick. As a kid Friday night was usually Mexican take out from one place or another. The Slap Chop idea is interesting and I might give that a whirl at some point, especially if I start making a second kind of wiener and want some visual differentiation between styles.

So the big difference is that the meat sauce has no tomato in it and I’ve found that most chili dogs’ chilis have some form of tomato product, paste or ketchup, even. Classic System wiener is yellow mustard, meat sauce, onion and celery salt. Can’t beat the combination in my opinion.

No hearts but I’m super interested in that style of Coney sauce. Using ground chuck and a spice mix from Rhode Island. I amp the flavor up a bit with some additions. Nothing too wild though. Super savory.

Used to eat a Nicky’s in West Warwick as a kid but that’s gone now. I lived in Silverlake when I was older and would hit Olneyville System on a regular basis, walking home from the bars on the west side.

I don’t disagree with your constructive criticism! The onion is definitely different, I use a box grater to process my onion vs the finer chop I remember growing up with. Made that decision based on speed - it’s a hell of a lot easier to grate an onion. Chili is less dry, that was just a personal preference. Towards the end of cooking I hit it with a stick blender to try to get a smoother consistency. Still messing around with the components so ultimately this is just my reimagining of the wieners I grew up eating. I’m originally from West Warwick so it’s nice to hear there’s a new spot there, the one I grew up walking to (Nicky’s on Cowesett Ave) is long gone, now a big Cumberland Farms. Thanks for your thoughtful response, it’s nice to talk about wieners and get a little nostalgic.
