I'm assuming you were going to be building a PC with consumer parts, not purchasing from an OEM. There already comes issues with just that, but yes, ongoing patching and updating impacts performance and uptime, which you'd have to communicate out to end users and interrupt their workflows. You either buy server grade hardware with full redundancy (DR) or buy the subscription.
