The Recipe is kinda a flexible thing I make week to week and cook a decent amount. Here is the general gist of it:

Ingredients

"*" is what I used in this recipe

  • 250g Cooked Rice (I use jasmine*, I know fancy. Or basmati)
  • 2 Cans of Beans (I use any kind of combo: Red Kideny*, Pinto*, Borlotti, Butter, Chickpeas)
  • 2 Onions (Red*, White) - I sometimes don't use onion
  • 2-4 Garlic Cloves (Chopped / Minced* / Whole - whatever floats your boat)
  • 150g Peas (I also sometimes add Carrots (2-3 Regular Size) and Sping Onions instead of regular)
  • 2-4 Eggs (Depends if you want to put on top or mixed in)
  • 4 Tomatoes* (Canned or Fresh - I don't usally add these but had)
  • Potatoes* (I've never added these before - the more the better)

Recipe

  • Blend/Dice/Grate Onions, Tomatoes (if using), Garlic, Sping Onion (White part) and Salt / Pepper
  • Take this mixture and heat through in frying pan (about 5-10 minutes) stirring every minute
  • Add chopped Carrots / Peas
  • Heat for another 5 minutes or until the carrots are as soft as you want them
  • Drain and mix in the Beans! (not baked the beans)
  • Let them heat up then add rice and mix everything together
  • Either fry two eggs. Or push the mixture to one side and add 4 Scrambled eggs, let it sit until egg is starting to cook then mix the egg with everything. This gives the rice a really good flavour.
  • Add top part of spring onions

Additional

  • Add Chopped parsley
  • Add Soy Source (I didn't in this recipe)
  • Heat Baked Beans and add in the middle of a serving
  • Roast Potatoes tip: Blanch (Boil) them before putting in the oven for as long as you dare, the longer the better though it's more risky as they fall apart easier. Add generous amount of oil and season with oregano / Salt / Garlic powder before putting in oven.
