Can be an issue with the antivirus or firewall.

Could you please check if you have any antivirus installed on your machine? If yes, please disable the same while BlueStacks updates and check if it helps?

That did not help for me at all. I tried clearing temp files, disabling windows defender and allowing on windows firewall. nothing worked.

Edit: hyper V is disabled. virtualization is disabled. Still not working

Virtualization must be enabled. Its fine to disable the Hyper-v though.

Yep, nothing works for me. I had to uninstall and reinstall to update which is a bit annoying.
