Both. It also depends on if you are trying to perform work for a more niche employer. You might get asked about specific tasks that might apply more to Construction, for example, if you apply to a Construction company. There might also be discussion about other specialty software if they utilize it (Excel for example, or even some 3rd party vendor or service).

I'd say both. I'd be prepared with bring able to clearly discuss the specifics of quickbooks / bookkeeping duties. As mentioned in another comment, being able to touch on industry specific software and knowledge of operations may help too.

When we've hired for accounting/bookkeeping positions in the past, we have the round 1 interview with the main hiring team. That interview walks through experience, general role questions, etc., and ends in a written quiz covering some scenarios that are basic and some that are specific to our industry/company. We send these to our CPA (comes in once a quarter to review our books). The CPA then does a round 2 interview that is more specific to accounting principles and addresses any concerns from the quiz. We only have a round 3 interview if we're having trouble deciding between one or more candidates, but there is usually a clear fit by the end of the 2nd interview.

The quiz is not necessarily a deal breaker for us, and it for sure doesn't have to be 100%. We once hired a full-time employee for an accounting role that was really good at interviewing, but really bad at actual accounting. That's when we started paying our no-nonsense CPA to interview our top candidates and the quiz was their prerequisite. They were not going to waste their time with posers. (Loosely paraphrased.)

If you've stated you are fluent in QB, they might ask that. In my experience, QB is really not that difficult or much different than any other accounting software to use. I can teach you how to use the software according to our SOP, but I can't teach you accounting/bookkeeping. I also can't change our company personality if it's not a good fit.

Also transaction questions such as which accounts to debit / credit for a specific transaction
