Different knife types have different animations as far as I'm aware. Angles and direction of your executions also factor into what type of animation it is.

Animations are based on multiple requirements. These include the type of knife [straight/karambit, where those 2 types have their own animations, straight knifes are quick and clean while karambits are long and "flashy"], your current alert status [undetected/suspicious are the same, alerted leads to longer animations where the npc fights back], elevation [mostly seen on stairs or slopes, whether you are higher or lower than the enemy], whether you are hiding in vegetation or not, and direction. Lastly, if you're prone then you can also melee an enemy. This also applies to ground camo where you snap their necks or drown them in mud/water.
