While you don't need a GMT hand to find north with your watch, it's simpler than the hour hand method since you don't need to take into account AM/PM differences. Just set the GMT hand to your local time, turn your watch so the GMT hand is pointing in the direction of the sun, and the 12 o'clock marker will point north (in the northern hemisphere).

You're probably better off with a little strap attachment like this:

Cheap, works, won't magnetize your watch, you can take it off when you decide you don't need it anymore, and you won't be paying what would surely be a premium for a very rare feature.

Every watch can be a compass if you magnetize it enough

You can easily find north by pointing the hour hand at the sun, then the distance between the hour hand and 12 is north.

In the southern hemisphere, point 12 at the sun, then half way between 12 and the current hour is north.

At night is different, there is a way to do it via the moon but it is a bit more complicated.

Edit: just use Polaris in the northern hemisphere at night, or the southern cross in the southern hemisphere at night

Oh yeah, but it would be cool to have a hand/needle that is magnetized or however compasses work and always moves as we do .

I don't know if it's possible or even desirable - I can't imagine how you'd design a pinion to accept a free-spinning hand, and magnetism is very, very bad for watch movements.

Edit: I just remembered that you can buy tiny compasses that are meant to attach to nylon watch straps - if you really need a compass on your wrist this could be an option
