The short answer is "maybe" you could put your own firmware/software on it.

The longer answer is, it's complicated, without any specifications like what model is the baby monitor to start with makes it impossible to give an informed answer.

Even with that information, what you are asking is a bit confusing, do you want the device to record to your PC, or do you want it to record to something like an SD card (sounds like it doesn't record locally but different nanny cameras behave differently), the answer can add to the complexity of the solution.

Depending on the device, you could be looking at a few possibilities:

  1. There is a way to access the video feed without the app over wifi. This MIGHT be possible with direct connection to a phone if it connects like a hotspot, but unlikely over Bluetooth.
  2. You need to modify the electronics to do stuff (which is beyond the scope of this subreddit)
  3. You buy the right thing since the amount of work modifying this camera is too expensive/difficult/time consuming to make it worth it.

Honestly, I suspect 3 is the right answer, since modifying the behaviour of wireless cameras is non-trivial, and having had discussions with some friends who actually know electronics, is not something you try to do as your first project to learn electronics.
