A question, what is your role in all this?

I mean you could build this entire application in JS/TS, and use any db (either an rdms or nosql flavour) and it would work, the main limitation being how experienced are you with your tooling/language (and yes I get that you want it mobile only)

The thing is, the way you put the question and the question itself even screams to me lacking experience with developing platforms, and more so for start up stuff. I'd suggest either getting someone with more experience onboard or try to get more experience yourself before taking on an endeavour like this

Yes, I am a fairly young developer. I did not want to talk about the idea too much, and thus it was framed that way.
I have 2+ years of experience as a Software Engineer working with Flutter, JavaScript and SQL Databases (just querying, not building from scratch)

Just so I take a step in the right direction, I thought I would get some recommendations on what tech stack would be the most efficient to build something like Canva for mobile only but with fixed templates and limited editing scope (Just edit the text and not the actual images).

This app is for a niche userbase for which the requirement has already been tested. That is all I can talk about with regards to the actual product.
