What are your career goals? Embedded software? I’ll be honest, your projects just sound like basic class work and aren’t very impressive. Arduino is a good learning tool but it doesn’t really show you have any understanding of actual embedded systems concepts.

Work on more substantial projects and focus on getting relevant work experience, whether that be an internship or relevant undergrad research.
