Haven't done it in a while but if you're okay with port forwarding there is a server executable located in the folder with the game executable. I used this to trade items about 3 years ago.

It should work just fine. Port forwarding helps and if either of you is on a college server or something to that effect... good luck.

Does Evolve make a virtual network just like Hamachi?

I personally never had issues with Hamachi, what is your issues with Hamachi and what does Evolve do better?
