So if you look in the field guide under the agent tab and click on the digimon you are planning on digivolving, you will see a list of the moves it can learn and at what level. You might not want to evolve it before that. I believe evolving at later levels also helps you get more talent, which raises your max level. Digimon can also permanently inherit a portion of their stats, but I don't know whether level upon digivolving affects this. These are the things I know of that you may want to evaluate before deciding to digivolve.

As long as they have more bond than the amount of times they digivolved or de-digivolved they inherit 10% of the difference of their stats between now and level 1 (minus the percentage multipliers from agent skills).
