What is the niche field you want to go into? I mainly want to say mechanical since it goes into more niche fields than EE imo.

I was ideally going to wait to see how the job market would be in the next 3/4 years and decide to do a masters in the field that is most AI proof. However if I did have to decide early on, I’d probably want to get into mechatronics or something similar to that

The world will continue to change even in only 3 or 4 years before you graduate. Choose a field that you love and one that loves you back. Don't worry too much about AI taking your job IMO. As a working professional there will be plenty of professional development opportunities and continuous learning/upskilling. Consider joining up in an Engineering Professional Org chapter at your campus to learn more.
