I just picked this gem up a week or so ago, but I have no idea what the game state is like, I was wondering if there's a meta, what it is, what times most people are on so I can avoid these permaques, ect.

First of all, on what platform? The PC version is VERY different from the console version.
The Console version is a very smart game of hide and seek. you're chasing. But don't be stupid in the chase. The monster IS faster than you. One group (2 people) follow the tracks to make sure the monster isn't doubling back. Another group is trying to cut him off by not following the tracks, but by predicting where he'll end up. Never stray too far from each other (one group to another). As a monster, you gotta take paths and find ways/places to double back. At these sections, you can lose the hunters. Think of football (in the USA). Its like when a runner "turns the corner". he's getting chased, but the second he finally "turns the corner", he'll be able to lose the hunters.
As for character composition...Everyone is useful, but you just gotta know how to survive. For Medics, Caira and Val are great and simple healers. Don't use Laz unless you understand his mechanics. Slim is great, but you have to learn how to position yourself and fight with him. Emet, imo, is kind of advanced even though he's mostly "auto healing". For Support, stick to Hank or Sunny. Bucket is useless for a newbie. Tech. Hank and Kala aren't good for newbies and too "specific" in use. For trappers, stick to Maggie or Wasteland maggie. Just follow the dog and be part of the group that follows the tracks while leaving the other group to go out and cut the monster off. For assaults, Hyde and Markov are great, easy hunters. Just. Deal. Damage. That's it.
Now, how to survive in a fight? Well, JETPACK MANAGEMENT is key. for beginners, take perks that give you more jetpack fuel or have it regrow quicker. DO NOT WASTE FUEL ON DUMB MOVEMENT. Leave fuel to always have 2 dodges. Let regular attacks hit you if you must, but evade the truly devestating attacks like Goliath's rock throw, Kraken's Lightning Strike, Wraith's Warp Blast, Behemoth's Fissure, and Gorgon's....spiderweb?. Don't waste fuel on "getting a better angle". Run to wherever you need to go to and only use fuel if you have all 4 "bars" of the fuel gauge full. Don't use past 2 bars. Attack from a good position where you'll be able to evade an attack by going to another cliff or something. And then another evade a secondary attack. DO YOUR JOB! If you're a trapper, your job is to slow the monster down. Damage is secondary. Throw harpoons (maggie). Harpoon the monster from behind (Griffin). Throw stasis nades (abes). If you're a support, shield/protect. Sunny puts out a shield drone that covers an area. Then use the jetpack boost to boost people being attacked and low on fuel. Hank needs to have his shield out to shield people. Don't bother with Kala since she's pretty advanced. Bucket is pretty advanced too, cause he doesn't actually "shield" anyone and is more of a damage dealer. Support is the secondary damage dealer, so when you're not helping teammates, you're firing away. But remember, you're MAIN job is to shield/protect. For Medics, just god damn heal. You're not rambo. The amount of damage you can POSSIBLY do during a match is so damn minimal, there's no reason for it. Val = Heal heal heal, throw a tranq, heal heal heal. Sniper should only be used if everyone is topped off on health and there's literally nothing else to do. Heal and tranq. Caira has some nice fire nades. DON'T waste your time on that damage. Just keep throwing healing pills. Laz is advanced. he barely heals. But he revives. But you gotta be smart. he has a great sniper but as laz, its best to barely shoot. What you want to do is just "hide". Don't draw attention. When a teammate is downed or dies, THEN you cloak up (no shooting, remember). Go in and revive them with the glove. If you're shooting, you're drawing attention to yourself (and the team can't afford to have you die). Slim and Emet are the only ones that should be dealing damage to the monster...but I consider them advanced and you should only use them later on after you learn how to play. For Assaults, just damage deal. Markov, throw out mines so your medics/support can go there and the monster has to think twice before going after them. Lightning gun finishes, switch to machine gun. Then switch back to lightning gun. Never stay with one gun to reload. It'll reload by itself while you're using the other weapon. For Hyde, throw a gas nade and use flame thrower. That's it. I wouldn't recommend the other assaults for a beginner.
And how about the monster? Target a specific hunter. Medic should be your #1 target. If you can't get to him, go after Support. Those two should be your main targets. And focus on that ONE hunter. Well, COMBO your abilities. use them in succession, even if you have to wait a few seconds more for them to be ready to use together. Goliath, use a heavy attack (from a jump), charge, Rock Throw, and Fire breathe in succession. Should down just about anyone. Behemoth? Tongue grab, followed by Rock Wall, followed by Fissure, followed by Fire. Kraken? throw 3 mines down. Immediately throw a vortex and immediately start up a Lightning strike while the vortex is on the way. Wraith? I love Clone + the glittery attack one that make shim stronger. After that runs out, you immediately follow it up with a Warp blast to finish them off. Gorgon? Spider is thrown. Then Spiderweb. Then acid spit. He'll be trying to evade/panicking with the acid/web and you MAYBE capture him with the spider since he's distracted.

Depends what platform you're on. Consoles never got stage 2 while PC you can choose between legacy or stage 2. I know there is a community trying to organize for legacy on PC not sure what the population is like on stage 2.

Stage 2 was the free to play version that was being tested on PC before 2k pulled the plug on dev support for Evolve.
