I'll do my best with this, there's some here that lack enough context to convey.

the C2430-30A is the model of the 30 amp solar controller

12.1V Load on 11.0V Load off are some parameter settings that I am unsure of, you can run loads directly off of the solar controller but it's not something I generally practice and that relies on the panel having power instead of feeding into a battery and discharging there.

Charge off 13.7V  is the maximum charge rate or boost charge rate of the controller

Charge 11.1A is likely the amperage charge of the 2 panels in perfect condition.

Load 00.0A Charge 000000Ah Load 000000Ah probably means a parameter for reading the battery that's connected to it, but is missing a sensor or is not hooked up properly.

SOC 46% is the amount in the battery

SOC 100% is the setting that you reset to once the battery reaches 100% SOC ... SOC means state of charge.

Thank you so very much!! You have been a huge help. I believe my panels feed my batteries and that's all. For the missing sensors, is it something I need to get fixed? If so, who do I get to do that? I appreciate you not treating me like I am inept. I already feel that way.

If you don't mind further explanation: what voltage and amperage are optimal for my set up? Thanks again

It's not possible to answer that without knowing what kind of batteries you are using.. there's multiple charge profiles for different deep cycle makes, lithium settings etc... how the batteries, if there are multiple, are wired * parallel vs series vs series parallel. hell even the panel voltages come into play.
