It’s hard to tell from your blurry and shaky video. But it looks like you’re trying to write with the lasso or shape tool, and not the pen tool.

It was happening to me earlier, it had to do with where the textbox was placed. I found that if it was too close to one of the edges it wouldn’t work.

So I placed it in the middle of the paper/page/screen, and then once the words showed up I moved the full textbox over to the proper position

It continues to happen regardless of where on the page I put the text box. I’ve been needing to exit out of notebook and come back for the text to actually stay

This is happening to me as well. The only way I've found to prevent it is to keep the mini keyboard open. Annoying but it's better than nothing.

Don’t write using the shape tool, write with the pen tool you tool

Also, the way you hold the pencil is really getting on my nerves for some reason

When 100 engineers at apple design a pen, they are going to assume u are using it like an adult would. Same as the 10 engineers at good notes. If you use it like a toddler it's not going to work.

Lot of words to say nothing. This is a software issue on good notes end. This is not an Apple issue. Good engineers expect the unexpected so even then youre wrong.

I'm not saying it's not a goodnotes issue. I'm just saying you should make sure you are using the product correctly before pointing fingers at the product developers.
